Grease traps
Overview
A ‘Grease Trap’ is essential where there is a communal kitchen such as at pubs, hotels, some schools, nursing and care homes and some leisure facilities. These must serve the kitchen drainage only and are normally fitted externally.

BES advises and supplies only ‘Full Retention’ grease traps.
‘Total Retention’ refers to the need for the kitchen wastewater to be held in the grease trap for 24 hours at peak flow This allows cooling and separation of fats, oils and grease.
The volume required depends on the type of establishment and type of cooking. A typical figure is 15 litres per cooked meal.

So for example:-
100 cooked meals x 15 litres = 1500 litres or 1.5M³
Hence a 1500 litre grease trap is required.

A full retention grease trap correctly sized may only need to be emptied once per year but should be checked frequently.
Grease control devices that use emulsifiers or other additives are not allowable as the grease is moved on into the treatment plant and this can interfere with the treatment process and cause odours.
